Mushroom Mania
Include antioxidant rich maitake, enoki, and shiitake mushrooms in this dish for a powerhouse of flavour with loads of health benefits. Enjoy this dish as either a side dish, sandwich filling or over your favourite pasta.
1-½ Pounds assorted mushrooms, rinsed well and any fibrous stems removed, small ones left whole, others sliced 2 Shallots, chopped 4 Cloves garlic, sliced 1 Tablespoon Almond Oil Salt and pepper to taste 1 Tablespoon Organic Mediterranean Extra Virgin Olive Oil with Lemon 2 Teaspoons Organic Flax Seed 6 Leaves basil, cut into strips 4 Ounces Feta cheese, crumbled
Preheat the oven to 400 degrees. Place the cleaned and trimmed mushrooms into a bowl. Add the shallots, and garlic. Drizzle with the almond oil, sprinkle with salt and pepper. Spray a cookie sheet with non stick cooking oil spray. Turn the mushrooms onto the prepared pan, using a rubber spatula to scrape any juices. Bake in the preheated oven for 15-20 minutes until deep brown and crispy. Remove from the oven and turn into a bowl. Drizzle the olive oil evenly over the mushrooms, then using two wooden spoons, toss to coat. Drizzle the Flax/Borage oil evenly over the mushrooms, then toss again to coat. Scatter the strips of basil leaves evenly over the mushrooms, and then toss to combine. Taste for seasonings. Turn onto a serving platter and scatter with the crumbled feta if desired.
